Roast the Prime Rib
Place the prime rib bone-side down on a roasting rack in a roasting pan. Roast in the preheated oven for 20 minutes. Then, reduce the oven temperature to 325°F (163°C) and continue roasting for about 1 hour and 30 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare.

Rest the Meat
Remove the roast from the oven and tent it loosely with aluminum foil. Let it rest for at least 20 minutes before carving to allow the juices to redistribute.

Prepare the Jus
While the roast is resting, add the beef broth to the roasting pan and scrape up any browned bits from the bottom. Simmer on the stovetop for 5-10 minutes to reduce slightly and concentrate the flavors.

Cook the Vegetables
In a separate pot, steam or sauté the house vegetables until tender. Season with salt and pepper to taste.

Slice the prime rib and serve with the jus, house vegetables, and baked potatoes.
