Prepare the Steak
Remove the ribeye steak from the refrigerator and let it sit at room temperature for about 30 minutes. Preheat your grill or cast-iron skillet over medium-high heat.

Cook the Steak
Place the steak on the hot grill or skillet. Cook for about 5-7 minutes on each side for medium-rare, or until the desired doneness is reached. Use a meat thermometer to check the internal temperature (130°F for medium-rare).

Rest the Steak
Remove the steak from the heat and let it rest for at least 10 minutes to allow the juices to redistribute.

Sauté the Vegetables
In a pan, add a tablespoon of olive oil over medium heat. Add the house vegetables and sauté for about 5-7 minutes until tender. Season with salt and pepper to taste.

Slice the ribeye steak and serve it on a plate. Top with demi-glace, serve with the sautéed vegetables, and the baked potato topped with butter, sour cream, and chives if desired.
