Cook the Fettuccine
In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside.

Prepare the Chicken
While the pasta is cooking, season the chicken breast with Cajun seasoning, salt, and black pepper. Heat olive oil in a large skillet over medium-high heat and cook the chicken for about 6-7 minutes on each side or until cooked through. Remove from skillet and let it rest before slicing.

Make the Alfredo Sauce
Reduce the heat to medium-low and pour in the heavy cream, stirring to combine. Add the grated Parmesan cheese and stir until melted and smooth. Adjust seasoning with salt and black pepper to taste.

Combine Everything
Add the cooked fettuccine to the skillet with the sauce and vegetables. Toss to combine. Slice the chicken and place it on top of the fettuccine.

Serve
Garnish with fresh parsley and serve immediately.
