Prepare the Jalapeno Tartar Sauce
In a bowl, combine mayonnaise, diced jalapenos, lemon juice, salt, and pepper. Mix well and set aside in the refrigerator to chill.

Prepare the Walleye
Set up a breading station with three shallow dishes: one with flour, one with a beaten egg, and one with chopped almonds.

Bread the Walleye
Dredge each walleye fillet in flour, dip in the beaten egg, and then coat in chopped almonds.

Fry the Walleye
In a large skillet, heat oil over medium heat. Once hot, add the almond-crusted walleye fillets and fry for about 4-5 minutes on each side, or until golden brown and cooked through.

Assemble the Sandwich
Toast the brioche buns lightly. Place the fried walleye fillet on the bottom half of the bun, add a generous spoonful of jalapeno tartar sauce, and top with the other half of the bun.
