Prepare the Ingredients
Preheat your oven to 400°F (200°C). Rinse the walleye fillets under cold water and pat them dry with paper towels. Set aside.

Coat the Fish
In three separate shallow dishes, place the flour in the first, beat the eggs in the second, and combine the chopped almonds, salt, and black pepper in the third. Dip each walleye fillet into the flour, shaking off excess, then into the beaten eggs, and finally into the almond mixture, pressing gently to adhere.

Cook the Walleye
In a large skillet, heat the olive oil over medium heat. Once hot, add the almond-crusted walleye fillets and cook for about 4-5 minutes on each side, or until golden brown and cooked through. You may need to do this in batches depending on the size of your skillet.

Prepare the Sides
While the fish is cooking, prepare the French fries according to package instructions and serve with cole slaw.
