    Activate Yeast

    In a small bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until frothy.

    Mix Dough

    In a large mixing bowl, combine all-purpose flour and sea salt. Add the activated yeast mixture and olive oil. Mix until a shaggy dough forms.

    Knead Dough

    Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm area for about 1-2 hours or until doubled in size.

    Prepare Wood-Fired Oven

    Preheat your wood-fired oven to about 450°F (232°C).

    Shape Focaccia

    Once the dough has risen, punch it down and turn it out onto a lightly floured surface. Shape the dough into a rectangle and place it on a floured baking sheet.

    Create Dents

    Using your fingers, create dimples all over the surface of the dough. Drizzle with olive oil and sprinkle with fresh rosemary and coarse sea salt.

    Let the shaped focaccia rest for another 20-30 minutes while the oven is finishing preheating.

    Bake Focaccia

    Transfer the focaccia to the wood-fired oven and bake for about 15-20 minutes, or until golden brown.

    Remove from the oven and let cool slightly before slicing. Serve warm.
