Prepare the Dough
In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy. In a large bowl, mix flour and salt. Add the yeast mixture and olive oil. Knead the dough for about 5-7 minutes until smooth.

Let the Dough Rise
Place the kneaded dough in a greased bowl, cover it with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Knots
Once the dough has risen, punch it down and divide it into 12 equal pieces. Roll each piece into a rope about 12 inches long and tie it into a knot. Place the knots on a greased baking sheet.

Prepare the Topping
In a small bowl, mix garlic powder, dried oregano, and parmesan cheese. Sprinkle this mixture generously over the formed knots.

Bake
Preheat the oven to 375°F (190°C). Bake the knots for 15-20 minutes or until golden brown. Remove from the oven and sprinkle with chopped parsley.
