Prepare the Potatoes
Wash and peel the russet potatoes, then cut them into thin fries. Soak the fries in cold water for at least 30 minutes to remove excess starch.

Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and garlic powder. Mix well.

Heat the Oil
In a deep fryer or heavy pot, heat oil to 350°F (175°C).

Batter the Fries
Drain and pat the soaked fries dry. Dip each fry in the batter mixture, ensuring they are well coated.

Fry the Fries
Carefully place the battered fries into the hot oil in batches. Fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

Add Truffle Oil and Cheese
While the fries are still hot, drizzle with truffle oil and sprinkle with shredded Gruyere cheese. Toss to combine.
