Sausage Corn Dogs

Method

Preparation

  1. 1

    Prepare the Coffee Crème Anglaise

In a saucepan, combine the coffee and egg yolks. Whisk together until smooth. Slowly heat the mixture while stirring constantly until it thickens enough to coat the back of a spoon. Remove from heat and stir in the maple syrup. Let it cool.

  2. 2

    Prepare the Corn Dog Batter

In a large bowl, mix together the flour, cornmeal, baking powder, sugar, and salt. In another bowl, whisk together the egg and milk. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

  3. 3

    Fry the Sausage Corn Dogs

Heat the vegetable oil in a deep pot to 350°F (175°C). Insert wooden skewers into each maple sausage link. Dip each sausage into the batter, ensuring it is fully coated. Carefully place the battered sausages in the hot oil and fry until golden brown, about 4-5 minutes. Remove and drain on paper towels.

  4. 4

    Serve

Serve the sausage corn dogs hot, drizzled with the coffee créme anglaise for dipping.
