    Heat oil in a deep fryer or large pot to 180°C (350°F). Fry the battered fries in batches until they are golden brown and crispy. Remove from oil and drain on paper towels. Season with salt.

    If using pre-cooked duck confit, shred the duck meat. If starting from raw, cook the duck legs in duck fat at low heat until tender, about 2-3 hours. Let cool and shred.

    In a saucepan over medium heat, cook the sausage until browned. Add flour and cook for 1-2 minutes. Gradually whisk in milk to create a smooth gravy. Season with salt and pepper.

    In a non-stick pan, fry the eggs sunny-side up until the whites are set but the yolks are still runny.

    On a plate, layer the battered fries, then top with shredded duck confit, cheese curds, and sausage gravy. Finally, place the sunny-side-up egg on top.
