Prepare the Cheese
Grate the Gruyere and Emmental cheeses and mix them together with the cornstarch in a bowl. This will help to prevent clumping.

Prepare the Fondue Pot
Rub the inside of a fondue pot with the garlic clove to infuse flavor.

Heat the Wine
Pour the dry white wine into the fondue pot and heat it over medium heat until it is warm, but not boiling.

Melt the Cheese
Gradually add the cheese mixture to the warm wine, stirring constantly in a figure-eight motion until melted and smooth.

Season the Fondue
Add freshly ground black pepper and nutmeg to taste, stirring to combine.

Prepare Dippers
Cut the sourdough bread and Andouille sausage into bite-sized pieces. Arrange fresh fruit on a platter.

Serve
Keep the fondue warm and serve with the prepared dippers. Enjoy by dipping pieces of bread, sausage, and fresh fruit into the cheese.
