Preheat Oven
Preheat your oven to 425°F (220°C).

Mix Dry Ingredients
In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

Cut in Butter
Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Add Buttermilk
Make a well in the center of the mixture and pour in the buttermilk. Stir until just combined.

Shape Biscuits
Turn the dough onto a floured surface and gently knead a few times. Pat or roll out to about 1 inch thick. Cut out biscuits with a round cutter.

Place biscuits on a baking sheet and bake for 12-15 minutes until golden brown.
Gravy

Cook Sausage
In a large skillet over medium heat, cook the breakfast sausage, breaking it up with a spoon until browned and cooked through.

Sprinkle the flour over the cooked sausage and stir to combine, cooking for about 2 minutes.

Gradually add the milk, stirring constantly until the gravy thickens, about 5-7 minutes.
