Prepare fruit

Peel the banana and break it into chunks. If using fresh blueberries and pineapple, rinse blueberries and drain; cut fresh pineapple into small chunks so it blends easily. If using frozen fruit, there's no need to thaw.

Load blender

Add banana chunks to the blender first, then add blueberries and pineapple chunks. Spoon in the Greek yogurt if using, sprinkle in the shredded coconut, and pour in the pineapple juice.

Sweeten and chill

Add the honey and ice. The ice amount can be adjusted for desired thickness; use less ice for a looser pourable smoothie, more for a thick, spoonable texture.

Blend

Secure the lid and blend on high until completely smooth and creamy, about 30โ€“60 seconds depending on blender power. Stop and scrape down the sides with a spatula if large fruit pieces remain, then blend again briefly.

Adjust consistency and flavor

Taste the smoothie and add more honey if extra sweetness is desired (add in 1/2 tsp increments). If too thick, add 2โ€“4 tablespoons pineapple juice and blend briefly to loosen.

Assemble & Serve

Pour the finished smoothie into two large bowls or four medium glasses, dividing evenly.

Top each bowl or glass with granola (about 1/2 cup per bowl or 1/4 cup per glass), then scatter the extra blueberries and pineapple chunks on top.

Sprinkle toasted coconut flakes over the granola and fruits for added texture and a coconut aroma.

Drizzle each bowl or glass with a little extra honey (about 1 tsp total divided) if desired.

Serve immediately with a spoon and/or straw so the granola stays slightly crunchy. If preparing ahead, store the smoothie (without granola) in an airtight container in the refrigerator for up to 24 hours and add granola just before serving.
