Prepare produce
Wash the apple and carrot thoroughly. Core the apple and cut into quarters. Peel the carrot if not using organic, then cut into 1-inch pieces. Peel the ginger with the edge of a spoon and slice it thinly (about 1 inch piece total). If using lemon, zest a small amount and then halve it.

Blend
Place the apple quarters, carrot pieces, and sliced ginger into a blender. Add 1/4 cup cold water to help the blades move. If you want brighter acidity, squeeze the juice of half a lemon into the blender. Blend on high for 45β60 seconds, or until the mixture is smooth and homogenous. If the mixture is too thick for your preference, add additional water 1 tablespoon at a time until you reach the desired consistency.
Taste the blended mixture. If you prefer it sweeter, add 1 teaspoon honey or agave and blend briefly (5β10 seconds) to incorporate.
Garnish & Finish
Fill a serving glass with ice cubes. Pour the blended Gingerwocky over the ice through a fine-mesh sieve if you prefer a smoother juice (use the back of a spoon to press solids through) or pour as-is for a thicker smoothie-like drink. Garnish with mint leaves and a small lemon zest twist if desired.
Serve immediately for best flavor and nutrient retention.
