Prepare fruit and greens
Peel the banana and break into chunks. Peel the mango, remove the pit, and chop the flesh into large pieces. Rinse the baby spinach and drain well (shake or spin in a salad spinner) to remove excess water.
Blend
Add the banana, mango pieces, and spinach to a high-speed blender. Pour in the apple juice and add the ice cubes. Add the lemon juice and honey or maple syrup if using. Secure the lid and blend on high until completely smooth, about 45–60 seconds. If the mixture is too thick, add up to 1/4 cup more apple juice and blend again for 10–15 seconds. If too thin, add a few more ice cubes or a small piece of frozen banana and pulse to thicken.
Taste and adjust sweetness or acidity: add a little more honey/maple if you want it sweeter, or a few drops more lemon juice to brighten. Blend briefly to incorporate any additions.
Assembly & Topping
Pour the smoothie into a tall glass or two smaller glasses, dividing evenly. Sprinkle the granola evenly over the top of each serving so it stays crunchy. If using, sprinkle chia seeds over the granola.
Serve immediately with a spoon or straw so you can enjoy the crunchy granola before it softens.
