Prepare fruit and greens

Wash the peaches, strawberries, and kale well. Pit and slice the peaches into roughly 1-inch pieces (you should have about 1 cup). Hull the strawberries and halve any larger berries so the measured amount equals 3 oz. Remove thick stems from the kale and roughly chop; pack about 1 cup loosely.

Add to blender

Place the prepared peaches, strawberries, and chopped kale into the blender in that order (so softer fruit sits closer to the blades).

Add liquids and yogurt

Pour in 1 cup fresh apple juice and add 1 cup plain fresh yogurt. If you prefer a sweeter smoothie, add 1 teaspoon honey now.

Add ice and blend

Add 3 ice cubes to chill and slightly thicken the smoothie. Secure the blender lid and blend on high for 45–60 seconds, or until completely smooth and no visible chunks remain. If mixture is too thick, add up to 2 tablespoons (30 ml) more apple juice and blend 10–15 seconds more. If too thin, add an extra 1/4 cup yogurt or one more ice cube and pulse to combine.

Taste and adjust

Taste the smoothie and adjust sweetness or acidity as desired: add up to 1 more teaspoon honey for sweetness or a squeeze of lemon if it tastes too sweet. Blend briefly to incorporate any additions.

Serve

Pour the smoothie into two glasses (about 12 oz / 360–400 ml each).

Garnish each glass with a thin peach slice and a strawberry half on the rim, if desired.

Serve immediately with a straw.
