Method

Preparing the Ribs

    Season the Ribs

    Rub the pork back ribs with tsp signature stout salt and black pepper. Let them marinate for at least 30 minutes.

    Cook the Ribs

    Preheat oven to 300°F (150°C). Place ribs on a baking sheet and cover tightly with foil. Bake for 2.5 to 3 hours until tender.

    Prepare Lemon Garlic Butter

    In a small saucepan, melt butter over medium heat. Add minced garlic and juice of the lemon. Cook for 2-3 minutes until fragrant.

Making the Cornbread

    Combine Dry Ingredients

    In a large bowl, mix together cornmeal, flour, baking powder, salt, and sugar.

    Add Wet Ingredients

    In another bowl, whisk together milk and eggs. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in jalapeño cheddar cheese.

    Bake Cornbread

    Pour the cornbread batter into a greased baking dish and bake at 400°F (200°C) for 20-25 minutes or until golden brown.

    Serve the Dish

    Once the ribs are done, brush them with the lemon garlic butter, slice them into portions, and serve with jalapeño cheddar cornbread and sliced red onions.
