Method

Prepare the Short Ribs

Cook the Short Ribs

In a large pot, season short ribs with salt and black pepper. Sear them on all sides until browned. Add chopped onion and minced garlic, cooking until fragrant. Pour in beef broth, bring to a simmer, cover, and cook on low for about 2-3 hours until tender.

Prepare the Tater Tots

Bake the Tater Tots

Preheat the oven according to package instructions for tater tots. Bake until golden and crispy, about 20-25 minutes. Toss with mango chipotle sauce once done.

Make the Hollandaise Sauce

Blend the Hollandaise

In a heatproof bowl, whisk the egg yolks and lemon juice together. Place over a pot of simmering water, whisking continuously. Gradually add melted butter until thickened. Season with salt and cayenne pepper.

Cook the Eggs

In a non-stick skillet, cook the eggs sunny side up until the whites are set but the yolks remain runny.

Assemble the Skillet

In a large skillet, layer the mango chipotle tater tots, shredded short rib, and sunny side up eggs. Drizzle with hollandaise sauce and garnish with diced tomatoes, sliced green onions, cilantro, and a dollop of cilantro lime crema.
