Fritters Preparation

Mix Fritter Batter

In a bowl, mix chickpea flour, water, curry powder, cumin, and salt until smooth. Stir in the grated mixed vegetables.

Heat oil in a frying pan over medium heat. Drop spoonfuls of the batter into the hot oil and fry until golden brown on each side. Drain on paper towels.

Poaching Eggs

Bring a pot of water to a gentle simmer and add vinegar. Crack each egg into a small bowl and gently slide into the water. Poach for about 3-4 minutes until the whites are set.

Hollandaise Sauce

In a bowl, whisk egg yolks and lemon juice until thick. Slowly drizzle in melted butter while whisking continuously until the sauce is smooth. Season with salt to taste.

Peach Chutney

In a saucepan, combine diced peaches, brown sugar, vinegar, and grated ginger. Cook over medium heat until the mixture thickens, stirring occasionally.

Maple Bacon Hashbrowns

Cook hashbrowns according to package instructions. Once ready, drizzle with maple syrup and toss in crumbled bacon.

Carrot Slaw

In a bowl, combine shredded carrots and cabbage. Dress with olive oil, apple cider vinegar, and salt to taste. Toss well.
