Salad Preparation

Cook the Potatoes and Green Beans

Boil the potatoes in salted water until fork-tender, about 15 minutes. Add the green beans to the pot for the last 5 minutes of cooking. Drain and let cool.

Prepare the Eggs

Place the eggs in a saucepan, cover with water, and boil for 9-10 minutes. Once done, transfer to an ice bath, cool, peel, and slice.

Slice the Vegetables

Halve the cherry tomatoes, thinly slice the red onion, and radish.

Assemble the Salad

In a large bowl, combine the arugula, potatoes, green beans, smoked salmon, sliced eggs, tomatoes, onion, and radish.

Make the Vinaigrette

In a blender, combine the black olives, olive oil, red wine vinegar, Dijon mustard, honey, salt, and pepper. Blend until smooth.

Serve

Dress and Serve

Drizzle the black olive vinaigrette over the salad, toss gently to combine, and serve immediately.
