Method

Prepare the Lamb Patty

    Mix Ingredients

    In a bowl, combine ground lamb, minced garlic, cumin, coriander, cayenne pepper, salt, black pepper, and olive oil. Mix well until all ingredients are evenly incorporated.

    Form Patties

    Divide the mixture into 4 equal portions and shape each portion into a patty. Make a slight indentation in the center of each patty to prevent puffing while cooking.

    Cook Patties

    Heat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes per side, or until they reach an internal temperature of 160°F.

Prepare Fried Halloumi

    Slice Halloumi

    Cut halloumi cheese into 1/2 inch thick slices.

    Fry Halloumi

    In a skillet, heat olive oil over medium heat. Add the halloumi slices and fry until golden brown on both sides, about 2-3 minutes per side.

Prepare Garlic Dill Yogurt

    Mix Yogurt Sauce

    In a bowl, mix together plain yogurt, chopped dill, minced garlic, and salt to taste. Set aside.

Assemble the Burger

    Build the Burger

    Toast the artisan buns if desired. On the bottom half of each bun, place a lamb patty, a slice of fried halloumi, a drizzle of harissa sauce, a dollop of garlic dill yogurt, fresh arugula, and tomato slices. Top with the other half of the bun.
