Prepare the Fries

    Soak and Dry Potatoes

    Peel and cut the russet potatoes into fries. Soak in cold water for at least 30 minutes, then drain and pat dry.

    Make Beer Batter

    In a bowl, combine the flour, cornstarch, salt, and pepper. Gradually whisk in the beer until smooth.

    Fry the Potatoes

    Heat the oil in a deep fryer or large pot to 350°F (175°C). Dip the fries in the batter and fry in batches until golden brown, about 5-7 minutes. Remove and drain on paper towels.

Make the Gravy

    Make Roux

    In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until golden.

    Thicken the Gravy

    Gradually whisk in the chicken broth, continuing to stir until the gravy thickens. Season with salt and pepper.

Assemble the Poutine

    Serve

    Place a serving of beer-battered fries on a plate. Top with cheese curds and pour hot chicken gravy over the top. Garnish with chopped chives.
