Prepare the Chicken

    In a bowl, combine buttermilk, salt, pepper, paprika, garlic powder, and onion powder. Add chicken thighs and let marinate for at least 1 hour, preferably overnight.

    In a separate bowl, mix together all-purpose flour and cornstarch. Dredge marinated chicken in the flour mixture, ensuring it is well-coated.

    Heat oil in a deep skillet over medium-high heat. Once hot, add the coated chicken and fry until golden brown and cooked through, about 6-8 minutes per side. Remove and drain on paper towels.

Assemble the Tacos

    Warm flour tortillas in a skillet for about 30 seconds per side. Add a layer of slaw mix, followed by fried chicken, corn, cheddar cheese, pickled onion, and a drizzle of chipotle aioli.
