Prepare Chicken

    Set Up Breading Station

    In three separate shallow bowls, place flour in one, beaten eggs in the second, and breadcrumbs mixed with salt and pepper in the third.

    Bread the Chicken

    Dip each chicken breast first in flour, shaking off the excess, then in the egg, and finally coat with breadcrumbs.

    Fry the Chicken

    In a large skillet, heat olive oil over medium-high heat. Fry the breaded chicken breasts for about 5-7 minutes on each side until golden brown and cooked through. Remove and let drain on paper towels.

Assemble the Dish

    Add Cheese and Sauce

    Place fried chicken in a baking dish, spoon tomato ragu sauce over each piece, and sprinkle mozzarella and parmesan on top. Broil in the oven until cheese is bubbly and golden, about 3-5 minutes.

Prepare Sides

    Smashed Nugget Potatoes

    Boil nugget potatoes until tender, about 15 minutes. Drain and gently smash with a fork. In a pan, melt butter and sauté minced garlic, then toss smashed potatoes in the mixture.

    Sauté Broccolini

    In another skillet, sauté broccolini in olive oil until bright green and tender, about 4-5 minutes. Season with salt and pepper.

Serve

    Plate the Dish

    On each plate, serve a piece of chicken parm topped with cheese and ragu, alongside smashed potatoes and sautéed broccolini. Garnish with fresh arugula.
