Prepare the Waffle Batter
In a large bowl, whisk together the blue cornmeal, flour, baking powder, and salt. In another bowl, mix the milk, eggs, and melted butter. Combine the wet and dry ingredients until just mixed.

While the waffles are cooking, heat the roasted pork chili verde and sirloin chili Colorado in separate pots over medium heat until warmed through.
