Prepare the Rice

In a medium pot, bring 2 cups of water to a boil. Add the uncooked rice, reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender. Fluff with a fork and set aside.

Cook the Chicken

In a large skillet, heat the olive oil over medium heat. Season the chicken breast with garlic powder, salt, and pepper. Cook the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the skillet and let it rest before slicing.

Sauté the Vegetables

In the same skillet, add the broccoli and diced carrots. Sauté for about 5-7 minutes until the vegetables are tender but still crisp. Add the soy sauce and stir well.

Combine Ingredients

Slice the cooked chicken and add it back to the skillet with the vegetables. Stir everything together, and cook for an additional 2 minutes. Sprinkle with sesame seeds before serving.

Serve the chicken and vegetable stir-fry over the cooked rice.
