Prepare the Hot Cakes
In a large bowl, mix together the flour, baking powder, sugar, and salt. In another bowl, whisk together the milk and egg. Combine the wet and dry ingredients, stirring until just mixed.

Cook the Hot Cakes
Heat a non-stick skillet or griddle over medium heat and add a little butter or oil. Pour 1/4 cup of batter onto the skillet for each hot cake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 1-2 minutes until golden brown. Repeat with remaining batter.

Cook the Meat
In the same skillet, cook the ham, bacon, or sausage patty until crispy and heated through. Remove from heat.

Assemble the Sandwich
Place one hot cake on a plate, top with the cooked meat, add the fried egg (if desired), then place another hot cake on top. Drizzle with maple syrup and serve warm.
