Prepare the Sausage Mixture
In a large bowl, mix together ground pork, pork fat, garlic powder, onion powder, paprika, black pepper, salt, and sage until well combined. Gradually add ice water and mix until the mixture is sticky and well blended.

Prepare the Casings
If using natural casings, rinse them under cold water and soak in water for about 30 minutes. Rinse again and keep them in water until ready to use.

Stuff the Sausage
Fit a sausage stuffer with the casing, ensuring there's enough casing left over to tie at the end. Carefully fill the casing with the sausage mixture, being careful not to overstuff. Twist sausages into links about 6 inches long and tie off the ends.

Cook the Sausage
In a skillet over medium heat, cook the sausage links for about 10-15 minutes, turning occasionally until they are browned and cooked through. Alternatively, the sausages can be grilled on medium heat.
