    Start by gathering all your ingredients. Dice the potatoes, green peppers, and onion, slice the mushrooms, and dice the tomatoes. Shred the slow-roasted turkey if not already done.

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the cubed potatoes and season with salt and pepper. Cook for about 10-12 minutes, stirring occasionally until the potatoes are golden brown and tender.

    Add the diced onions, green peppers, and sliced mushrooms to the skillet with the potatoes. Cook for an additional 5-7 minutes until the vegetables are softened.

    Incorporate Turkey and Spinach

    Stir in the shredded turkey, diced tomatoes, and fresh spinach. Cook for another 3-4 minutes until everything is heated through and the spinach is wilted.

    In a separate small skillet, heat the remaining tablespoon of olive oil. Crack the eggs into the skillet and cook them to your liking (scrambled, sunny-side up, or over-easy).
