    Prepare the Prime Rib

    Preheat your oven to 450°F (232°C). In a small bowl, mix together the kosher salt, black pepper, garlic powder, and chopped fresh rosemary. Rub the prime rib roast with olive oil and then rub the seasoning mixture all over the meat.

    Roast the Meat

    Place the seasoned prime rib in a roasting pan, bone-side down. Roast in the preheated oven for 20 minutes to develop a crust. Then, reduce the oven temperature to 325°F (163°C) and continue cooking for an additional 1 to 1.5 hours, or until the internal temperature reaches your desired doneness (120°F/49°C for rare, 130°F/54°C for medium-rare).

    Make the Au Jus

    While the meat is resting, place the roasting pan on the stove over medium heat. Add the beef broth and red wine, scraping up any browned bits from the bottom of the pan. Simmer for about 10 minutes, then strain the liquid into a gravy boat.

    Serve

    Slice the prime rib into 8 oz portions and serve with the au jus on the side.
