Cooking Instructions

  1. 1

    Prepare the Prime Rib

Remove the prime rib from the refrigerator and let it sit at room temperature for about 30-60 minutes before cooking.

  2. 2

    Season the Meat

Preheat your oven to 450°F (232°C). In a small bowl, mix together salt, black pepper, garlic powder, and chopped fresh rosemary. Rub the mixture all over the prime rib, then drizzle with olive oil and rub it in.

  3. 3

    Roast the Prime Rib

Place the seasoned prime rib on a roasting rack in a shallow pan. Roast in the preheated oven for 20 minutes to develop a crust, then reduce the temperature to 325°F (163°C) and continue to roast for about 60-90 minutes, or until a meat thermometer reads 130°F (54°C) for medium-rare.

  4. 4

    Make the Au Jus

Once the prime rib is done, remove it from the oven and cover it with foil to rest for 20 minutes. Meanwhile, pour the beef broth into the roasting pan, scraping up any browned bits. Add butter and simmer for about 5 minutes.

  5. 5

    Serve

Slice the prime rib and serve it with the au jus on the side.
