Prepare the taco meat
In a skillet over medium heat, cook the ground beef until browned. Drain excess fat and stir in taco seasoning. Follow package instructions to cook, typically adding some water and simmering for a few minutes.

Cook the omelet
In a non-stick skillet, heat the butter or oil over medium heat. Pour in the whisked eggs and cook until the edges start to set.

Add the fillings
Once the eggs are slightly set, add the cooked taco meat, shredded cheese, green chilies, jalapeños, diced onion, and black olives to one half of the omelet.

Fold and finish cooking
Carefully fold the omelet in half over the fillings and cook for an additional 1-2 minutes, allowing the cheese to melt and the eggs to fully set.

Slide the omelet onto a plate, top with additional melted cheese, and serve with sour cream and salsa on the side.
