    Chop the bell pepper, onion, and mushrooms into small pieces. Rinse the spinach and set aside.

    In a bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

    In a non-stick skillet, heat the olive oil or butter over medium heat. Add the chopped onion, bell pepper, and mushrooms. Sauté for about 5 minutes until they are softened.
