    Prepare the Potatoes

    Peel the russet potatoes and shred them using a box grater or a food processor. Rinse the shredded potatoes under cold water to remove excess starch, then drain and pat dry with paper towels.

    Optional Onion Preparation

    If using, finely chop the onion.

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium-high heat until shimmering.

    Cook the Hashbrowns

    Add the shredded potatoes (and onion, if using) to the skillet in an even layer. Season with salt and black pepper. Cook for about 5-7 minutes until the bottom is golden brown and crispy.

    Flip and Finish Cooking

    Using a spatula, flip the hashbrowns over in sections and cook for an additional 5-7 minutes until the other side is also golden brown and crispy.

    Serve

    Remove from skillet and drain on paper towels if needed. Serve hot.
