Prepare the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer (or sparkling water) until the batter is smooth and has no lumps. Let it rest for about 15 minutes.

Heat the Oil
In a large, deep skillet or a deep-fryer, heat the vegetable oil to 350°F (175°C). Make sure there is enough oil to fully submerge the fish.

Batter the Fish
Pat the Alaskan cod fillets dry with paper towels. Dip each piece into the batter, ensuring they are fully coated.

Fry the Fish
Carefully place the battered fish into the hot oil, a few pieces at a time, to avoid overcrowding. Fry for about 4-5 minutes or until golden brown and crispy. Remove the fish with a slotted spoon and drain on paper towels.

Serve the fish hot with your choice of sides like fries, tartar sauce, or malt vinegar.
