Prepare the Hash Browns
Peel and grate the potatoes. Rinse the grated potatoes in cold water and drain thoroughly. Squeeze out excess moisture using a clean kitchen towel.

Cook the Hash Browns
Heat 1 tablespoon of butter in a non-stick skillet over medium heat. Add the grated potatoes and flatten them into an even layer. Season with salt and pepper. Cook for about 5-7 minutes until the bottom is golden brown. Flip and cook the other side for another 5-7 minutes until crispy. Transfer to a plate and keep warm.

Cook the Eggs
In the same skillet, add the remaining tablespoon of butter. Crack the eggs into the skillet and cook to your desired doneness (sunny-side up, over-easy, scrambled, etc.). Season with salt and pepper.

Serve
Plate the hash browns, top with the cooked eggs, and serve alongside the toast. Add any optional toppings as desired.
