    Prepare the Potatoes

    In a large pot, bring salted water to a boil. Add the diced potatoes and cook until just tender, about 10 minutes. Drain and set aside.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and green bell pepper. Sauté for about 5 minutes until the vegetables are soft. Add the minced garlic and cook for an additional minute.

    Combine Ingredients

    Add the cooked potatoes and diced corned beef to the skillet. Season with salt, black pepper, and paprika. Stir well to combine.

    Cook the Hash

    Spread the mixture evenly in the skillet and press down with a spatula. Cook for about 5-7 minutes without stirring until the bottom is crispy. Flip the hash using a spatula and cook for another 5-7 minutes until the other side is crispy.

    Optional Eggs

    If using eggs, create small wells in the hash and crack an egg into each well. Cover the skillet and cook until the eggs are set to your liking, about 3-5 minutes.

    Remove from heat and serve hot, optionally garnished with chopped parsley.
