Prepare the Ingredients
Slice the ham into bite-sized pieces, if not already done. If using fresh pineapple, peel, core, and slice it into rings or chunks. Slice the jalapeños into thin rounds, removing the seeds if you prefer less heat. Set aside.

Make the Sauce
In a small bowl, combine honey, soy sauce, Sriracha, minced garlic, and black pepper. Mix well until all ingredients are combined. Set aside.

Cook the Bacon
In a large skillet over medium heat, cook the bacon until crispy. Remove the bacon from the skillet and place it on paper towels to drain excess fat. Leave about 1 tablespoon of bacon grease in the skillet.

Sauté the Vegetables
In the same skillet, add the sliced jalapeños and pineapple. Sauté for about 3 to 4 minutes until they are slightly caramelized and tender.

Add Ham and Sauce
Add the sliced ham to the skillet along with the prepared sauce. Stir to coat all the ingredients and cook for an additional 5 minutes, allowing the flavors to meld together.

Combine with Bacon
Crumble the cooked bacon and add it to the skillet. Mix thoroughly and cook for another 2 minutes.
Serving

Plate the Dish
Spoon the ham, pineapple, jalapeño, and bacon mixture onto a serving platter. Garnish with chopped cilantro and lime wedges. Serve warm.
