Main Dish Preparation

1. Whisk the Eggs

In a bowl, crack 6 eggs and add 0.5 cups of milk, 0.5 tsp of salt, and 0.25 tsp of black pepper. Whisk until well combined.

2. Cook the Eggs

In a non-stick skillet, melt 2 tbs of butter over medium heat. Pour the egg mixture into the skillet and cook, stirring gently, until the eggs are softly scrambled and just set, about 5-7 minutes.

3. Prepare the Avocado Toast

Toast 4 slices of bread until golden brown. While the bread is toasting, slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork and mix in 1 tbs of lemon juice and a pinch of salt.

Spread the mashed avocado on the toasted bread slices. Top with sliced tomato for added freshness.

5. Drizzle with Olive Oil

Drizzle 1 tbs of olive oil over the avocado toast for extra flavor.
