    Prepare the Steak

    Take the ribeye steaks out of the refrigerator and let them sit at room temperature for about 30 minutes. This helps them cook evenly.

    Season the Steak

    Rub the steaks with olive oil and generously season both sides with salt and black pepper.

    Cook the Steak

    Preheat a grill or skillet over medium-high heat. Add the steaks and cook for about 4-5 minutes per side for medium-rare, or until your desired doneness is reached. Remove from heat and let rest for 5 minutes.

    Slice the Onions

    Peel and slice the yellow onions into thin rings.

    Cook the Onions

    In a skillet over medium heat, melt the butter. Add the sliced onions and cook for about 10-15 minutes, stirring occasionally, until they are soft and caramelized.

    Add Balsamic and Sugar

    Stir in the balsamic vinegar and brown sugar. Continue to cook for an additional 5 minutes until the mixture is well combined and slightly thickened.

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thick strips to resemble natural cut fries.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Fry the Potatoes

    Heat the vegetable oil in a deep fryer or a large, heavy pot to 350°F (175°C). Carefully add the soaked potatoes in batches and fry until golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels.

    While the fries are still hot, sprinkle them with salt to taste.
