Preparing the Steak

    Season the Steak

    Rub the ribeye steak with olive oil, salt, and black pepper on both sides. Let it sit at room temperature for about 30 minutes.

    Grill the Steak

    Preheat the grill to high heat. Place the steak on the grill and cook for about 4-5 minutes per side for medium-rare, or until desired doneness is reached. Remove from the grill and let it rest for 5 minutes before slicing.

Sautéing the Vegetables

    Chop the Vegetables

    Slice the onion and bell pepper into thin strips.

    Sauté the Vegetables

    In a skillet over medium heat, add a little olive oil. Add the sliced onion and bell pepper. Sauté for about 5-7 minutes until the onions are translucent and the peppers are softened.

Assembling the Steak & Cheese

    Melt the Cheese

    Once the steak is rested, slice it thinly against the grain. In a clean skillet, add the steak slices and top with cheddar cheese. Cover the skillet with a lid and heat over low heat until the cheese melts.

    Combine Ingredients

    On a serving plate, layer the sautéed vegetables over the melted cheese-covered steak. Drizzle with mayonnaise and hot sauce to taste.
