Wash the Russet potatoes thoroughly and peel them if desired. Cut them into even-sized fries, approximately 1/4 inch thick.

Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch. This will help them become crispier when fried.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). You can test the oil by dropping in a small piece of potato; if it sizzles, it's ready.

Fry the Potatoes
Carefully add the soaked fries to the hot oil in batches. Fry for about 5-7 minutes or until they are golden brown and crispy.

Remove the fries from the oil and place them on paper towels to drain excess oil. While they're still hot, sprinkle with salt, black pepper, and garlic powder to taste.

Gradually whisk in the milk, ensuring there are no lumps. Continue to cook, stirring constantly, until the mixture thickens and bubbles.

Lower the heat and add the shredded cheddar cheese and cream cheese. Stir until completely melted and smooth. Add hot sauce, and mix well.

Place the crispy fries on a serving platter. Pour the cheese sauce generously over the fries.

Sprinkle the crumbled bacon, sliced green onions, and jalapeños over the cheesy fries.
