    Slice the Steak

    Thinly slice the ribeye steak against the grain into strips.

    Prepare the Vegetables

    Slice the green bell pepper, onion, and mushrooms into thin strips.

Cooking

    Sauté the Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion, green bell pepper, and mushrooms. Season with salt and black pepper. Sauté for about 5-7 minutes until the vegetables are tender. Remove them from the skillet and set aside.

    Cook the Steak

    In the same skillet, add the remaining tablespoon of olive oil. Increase the heat to medium-high. Add the sliced ribeye steak to the skillet. Cook for about 3-4 minutes until the steak is browned and cooked through.

    Return the sautéed vegetables to the skillet with the steak. Stir to combine and cook for an additional 1-2 minutes to heat everything through.

    Melt the Cheese

    Layer the provolone cheese slices over the steak and vegetable mixture. Cover the skillet with a lid and let it cook for about 2-3 minutes until the cheese is melted.

    Slice the hoagie rolls lengthwise without cutting all the way through.

    Using a spatula, scoop the steak and cheese mixture and fill each hoagie roll generously.
