Method

Preparation

  1. 1

    Prepare the mushrooms

Clean the Portobello mushrooms with a damp cloth to remove any dirt. Remove the stems and gently scrape out the gills with a spoon.

  2. 2

    Preheat the oven

Preheat your oven to 375°F (190°C).

Cooking

  1. 3

    Sauté the garlic

In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.

  2. 4

    Season the mushrooms

Add the cleaned Portobello mushrooms to the skillet, gill side up. Sprinkle with salt, pepper, and fresh thyme. Cook for about 5 minutes until they start to soften.

  3. 5

    Add the Swiss cheese

Place slices of Swiss cheese on top of each mushroom. Transfer the skillet to the preheated oven and bake for 10-15 minutes until the cheese is melted and bubbly.

Serving

  1. 6

    Garnish and serve

Remove the mushrooms from the oven and let them cool for a minute. Drizzle balsamic glaze over the top and sprinkle with chopped parsley before serving.
