Prepare the Chipotle Ranch Dressing

    Mix the Dressing

    In a bowl, combine the ranch dressing, chipotle in adobo sauce, and lime juice. Mix well until fully blended. Set aside in the refrigerator to chill.

Make the White Cheese Sauce

    Melt the Butter

    In a medium saucepan over medium heat, melt the butter.

    Add Flour

    Once melted, whisk in the flour and cook for about 1 minute, stirring continuously.

    Add Milk

    Gradually whisk in the milk, ensuring no lumps form. Cook until the mixture thickens, about 3-5 minutes.

    Add Cheese and Seasoning

    Remove from heat and stir in the shredded Monterey Jack cheese, salt, and black pepper until smooth. Set aside.

Cook the Burrito Filling

    Cook the Meat

    In a skillet over medium heat, cook your choice of sausage, bacon, or ham until fully cooked. Remove from heat and chop into small pieces.

    Scramble the Eggs

    In a bowl, whisk the eggs. In the same skillet, scramble the eggs over medium heat until cooked to your liking.

    Add Hashbrowns

    Add the crispy hashbrown coins to the scrambled eggs and stir to combine. Cook for an additional 2-3 minutes until heated through.

Assemble the Burrito

    Fill the Tortillas

    Lay the flour tortillas flat and divide the egg, hashbrown, and meat mixture evenly between them. Top with shredded Monterey Jack cheese and drizzle with white cheese sauce.

    Fold in the sides of the tortilla and roll tightly from the bottom up to enclose the filling.
