Soak the Potatoes
Place the cut potatoes in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and results in crispier fries.

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture. This will prevent the oil from splattering.

Fry the Potatoes
Carefully add a batch of the dried potato sticks to the hot oil. Avoid overcrowding the pot. Fry for about 4-5 minutes or until they turn golden brown and crispy.
