Cooking Pasta

Boil the Pasta
In a large pot, bring water to a boil. Add a pinch of salt and then add the rotini pasta. Cook according to package instructions until al dente, usually about 8-10 minutes. Stir occasionally to prevent sticking.

Drain the Pasta
Once cooked, drain the pasta in a colander and set aside. Do not rinse.
Making the Cheese Sauce

Make the Roux
Sprinkle the all-purpose flour into the melted butter, whisking continuously for about 2 minutes until it turns a light golden color.

Add Milk
Gradually pour in the milk while continuing to whisk to avoid lumps. Keep whisking until the mixture thickens, about 5-7 minutes.

Incorporate Cheeses
Once the sauce has thickened, reduce the heat to low and add the shredded cheddar cheese and grated Parmesan cheese. Stir until the cheeses are completely melted and the sauce is smooth.

Combine Pasta and Sauce
Add the drained rotini pasta to the cheese sauce. Stir gently until all the pasta is evenly coated with the creamy cheese sauce.
