Preparing the Steak

    Marinate the Steak

    In a bowl, combine buttermilk, garlic powder, onion powder, paprika, salt, and black pepper. Add the beef cube steaks, ensuring they are well coated. Cover and refrigerate for at least 1 hour or overnight for best results.

    Prepare the Breading

    In a shallow dish, mix the all-purpose flour and cornstarch. Season with additional salt and black pepper. Remove the marinated steaks from the refrigerator, allowing excess buttermilk to drip off.

    Bread the Steaks

    Dredge each steak in the flour mixture, pressing gently to ensure the coating adheres. Shake off any excess flour.

    Fry the Steaks

    In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the breaded steaks. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.

    Prepare the Eggs

    In a non-stick skillet, melt 2 tablespoons of butter over medium heat. Crack the eggs into the skillet and season with salt and black pepper to taste. Cook until the whites are set but the yolks remain runny, or to your desired doneness (about 3-4 minutes). Remove from heat.

Preparing the Potatoes

    Cook the Potatoes

    Wash and peel the russet potatoes. Cut them into small cubes. In a pot, cover the potatoes with water and bring to a boil. Cook for about 10-15 minutes until fork-tender. Drain and let cool slightly.

    Smash or Crisp the Potatoes

    For Smash'd! American potatoes, lightly mash the cooked potatoes with a fork and mix with olive oil, salt, pepper, and optional fresh herbs. For crispy potatoes, toss the cubed potatoes with olive oil, salt, and pepper, then spread them on a baking sheet and roast at 425°F (220°C) for 20-25 minutes until crispy.
