Chicken Cutlets

Prepare the Chicken
Pound the chicken breasts to an even thickness of about 1/2 inch.

Breading Setup
Set up a breading station with three shallow dishes: one for flour mixed with salt and pepper, one for beaten eggs, and one for bread crumbs.

Bread the Chicken
Dredge each chicken breast in flour, shaking off excess, then dip in the egg, and finally coat with bread crumbs.

Fry the Chicken
In a large skillet, heat olive oil over medium-high heat. Fry the breaded chicken cutlets for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Sauté Garlic
Add minced garlic and sauté for about 1 minute until fragrant but not browned.

Add Tomatoes and Seasonings
Pour in the crushed tomatoes, oregano, basil, salt, pepper, and sugar. Stir to combine.

Simmer the Sauce
Reduce heat and let the sauce simmer for about 20 minutes, stirring occasionally.

Preheat the Oven
Preheat your oven to 375°F (190°C).

Build the Sub
Slice the submarine rolls lengthwise. Place a chicken cutlet in each roll, top with marinara sauce, and two slices of provolone cheese.

Place the assembled subs on a baking sheet and bake in the oven for about 5-7 minutes, or until the cheese is melted and bubbly.

Remove from the oven, garnish with fresh basil leaves, and serve immediately.
