Prepare the Chicken
Season the chicken breasts with salt and black pepper on both sides. In a large pot, heat a tablespoon of oil over medium heat and add the chicken breasts. Cook until golden brown on both sides, about 5-7 minutes per side. Remove from pot and set aside.

Combine Ingredients
Add the wild rice to the pot with the sautéed vegetables. Stir well to combine, then pour in the chicken broth. Add the thyme, bay leaf, and return the seared chicken breasts to the pot.

Simmer
Bring the mixture to a boil, then reduce heat to low and cover. Let simmer for about 45 minutes or until the rice is tender and the chicken is fully cooked through (internal temperature of 165°F).

Serve
Remove the bay leaf and shred the chicken in the pot using two forks. Stir well to combine the chicken with the rice and vegetables. Adjust seasoning with salt and black pepper to taste. Serve hot in cups or bowls, garnished with fresh parsley if desired.
